Free fatty acids in an oil or fat sample react with a pH indicator, which changes its color depending on the concentration of the free fatty acids. The concentration of free fatty acids is determined semiquantitatively by visual comparison of the reaction zone of the test strip with the zones of a color scale.
The test strips are stable until the date stated on the package if stored closed at +15 to +25 °C
